I have setup VPN and able to access internal IPs other than a dongle and router.

I have enabled remote access to the router through all methods that it allows.

Is it possible to telnet in etc? As I would like to pull back VPN dial in logs and change settings if needed

If your dongle is assigning a internal IP to the 7800DX this will be hard, as the dongle is working as router and assigning the 7800dx a internal (known NAT issue) so enabling remote access features eg telnet, HTTP etc won't work as the dongle has the external IP, and the router has the internal IP, so VPN might be the best method.

Can you try adjusting the MTU, eg 1400 for the LTE WAN connection, and then see if you can access the router over the VPN tunnel,
